After looking at the growth patterns of favia, acans, blastos, etc. I was wondering if its best to place them on their own rock or a flat surface, or if they would do well on the side of a larger rock structure? Thanks for any advice in advance.

I put all of mine (everything you listed) on their own smaller rocks that stay on the bottom of the tank. That way they can cover the whole rock and I can move them easily if needed. Also makes it easier to dip them if needed.
