I bought these as a combo frag and their growth has exploded after about three weeks, but it looks like the toadstool might be, or might start stunting the growth of the other one. Should I separate these two and if so, how?

Yes IMO you should separate them, they both grow very large so they will need their own space. It also looks a bit silly lol. See if your able to somehow gently peel one off of the plug. Or hopefully someone has a good idea to remove one of them. Good luck

Here’s a couple of photos from just now, they both seem to be doing ok and not touching. I’ve read a ton of articles on whether to separate or not but seems the opinions are split. I’d appreciate any advice or stories from anyone with experience.

Now they are touching but the tank seems fine, I have to think this happens many times throughout the day. Perhaps they tolerate each other and are fine?

They’re both leather corals so touching shouldn’t be an issue, especially if they can that way. However, as @Mr. Mojo Rising said, you should separate them to give them both ample opportunity to grow! IMHO.
