Hey, as already made corals formulas such as Red Sea Reef Energy are extremely expensive, I am trying to create my own formula.
Amino Acids - for now I will use concentrated Aquaforest Amino Mix.
Carbohydrates - I have no clue what to add apart of sugar and if it's really needed.
Vitamins - to be honest any multi vitamin formula for humans should do the trick, wouldn't it?
I have a problem with fatty acids, though. I would like to mainly focus on omega-3 (DHA&EPA), but the question is - how to dissolve it in water? What should I use, to not harm the corals and maybe even increase the chances of absorption?

Fatty acids won't dissolve if over a certain carbon chain length. The best you can do is form them into soap-like micelles. It's a challenging task that, for real experiments, has complicated solutions.
