I'm planning on buying a heniochus but was concerned if it'll eat my shrimps

You should be alright just have to monitor it around them. Be careful with the types of coral you add or have when adding a Heniochus.
 
I have fire shrimps and a dozen or so hermit crabs in a 125 with no issues
