So I have 2 freshwater tanks setup right now... But have gotten into the "saltwater world" I was thinking about adopting my current fish out to new homes and re-using the tanks... What would I have to watch out for?

The main thing is to make sure that you thoroughly rinse out the old tanks because with freshwater you most likely use tap water which can contain contaminants that salt water isn't going to like such as copper another heavy metals so make sure you rinse out the tank really good with RO water and purchase an Rodi unit to make your own water it's cheaper in the long runSo I have 2 freshwater tanks setup right now... So I'm thinking of just making them med/ quarantine tank... No Corals. I have a different tank as my display.
