From the start, I always had A LOT of gurgling noise coming from the overflow (a simple overflow, just an hole in the tank, an elbow and an hose that goes down to the sump, mostly the standard one in italy)

Any idea on how to remove this annoying gurgling noise other than keeping the return pump and the minimum ? (it's too low)

This is what i mean:

The problem it’s a single drain so you will always have air and water mixing and as it runs down the pipe and that “gurgling “ is the end result. Ideally you want to incorporate a “herbie” or “bean animal” style overflow which provides a full siphon and eliminate noise from your drain but not sure how you would do it with this set up.

The entire intake has to be submersed to alleviate the noise from air and water mix. As for return pump, you want to assure water is not coming in faster than it can return water to tank but in your case, its the opposite. The answer for this type of set up is Xaqua overflow which I used on a tank similar to your plumbing type and it was awesome.

i know for sure that this kind of drain can be made silent because ALL of my friends (and almost everyone in Italy) has this type and they are silent most of the time

only mine is gurgling 24/7

Yours is a different design and I can see why the noise- Its in part to do with the type of strainer. If you placed an elbow in opening with that strainer at surface, may quiet it down. The Xaqua which dawned on me requires an extra hole so Ideal for you is mini overflow box allowing you to get rid of strainer and running an elbow downwards for water to enter and the box becomes your new overflow

so instead of draining the water directly, you are suggesting to add an elbow inside the tank and draining the water from the bottom of the elbow, kepping It fully submerged?

I've partially reduced the gurgling noise by opening an hole in top of the drain, but i don't like this solution very much
