Peppermint shrimp have been know to go rogue if out of aiptaisia to eat and not fed. Scavengers so they look for what they can get. Mine went for my acans for a while there.

It's small enough to remove from your rock and give it a quick dip to see if any critters come off. I've had euphyllia for months before noticing a decline in health and finding flatworms with no new introductions.

Not saying it's the culprit, but my emerald crab went for my Duncans once. A chopstick and some cursing coaxed him away. Haven't had a problem since.
Also, the peppermints have been known to tear into the mouths of coral to get the food they ate.

Will it grow back?

I had a peppermint destroy a show size hammer colony in a day. He was banished to the sewer I was so mad.
I think he did it just to tick me off they coexisted for over a year and just one day jumped in the middle and started shredding it up
