I have read about how some people put a bowl, jar, etc. with sand or rocks in the bottom of it to house their fresh cut soft corals until they attach. My question is, would me placing a mason jar in the bottom of my tank to serve for this purpose leak any bad chemicals or anything into my tank if it remained there for days or weeks?

nah, i've used them before . i've found out using those cheap white plastic disposable drinking cups works great also. they're small (narrower), you can put rubble on the bottom, and is tall enough (if you put it in a low flow zone) so the mushroom or softie stays in the cup and won't tip over. couple sofites in each works great.
