We always show our tanks during the day. Look at all the photos here, lights are on, everything is out and active -- but there's a lot going on at night too!

What do you have in your tank that's only out at night? In my previous tank I had bristle worms and all sorts of creepy crawlies that only came out at night - my current tank has yet to get bristle worms, but I do have lots of limpets and some weirdo worms that live in the rock and come out at night to catch stuff in the water.

I'd suggest rotating whatever you used to record your video 90 degrees so that it's wide instead of tall. I use Adobe Premier to edit videos, but really anything will work. iMovie, Final Cut Pro, lots of options around for editing videos.
