So Im building an 80inch tank. I would like to use 72 inch VHO bulbs. I am not sure what to do for a fixture. Building it out of wood would be be very heavy. Any ideas?

For VHO's you can just secure the end caps inside your canopy. Is this what you are talking about?

If you are looking to "frame" the fixture you can user an angle bar like the link below or maybe use the "C" channel ppl have been using in many LED builds.

3/4 in. x 96 in. Angle 1/8 in. Thick Aluminum-56850 at The Home Depot

No canopy this has to hang above the tank. Monkey, that may work. Just build it same shape as tank and powdercoat it.
