how would you guys move a big and tall rock structure that's in my 40b without having die off? It's all epoxied together..no way I'm breaking it apart.

Buy the biggest Rubbermaid tub? I thought filling this up with water would be dangerous driving with...

Any other ways to consider?

Tub with saltwater and a tight fitting lid is how I would do it if the move wasn't too far away. If it's a short drive just figure out a way to secure the lid and you should be good to go.

If longer drive, then you'll need to consider circulation and possibly heat.

Cured rock ships over night wrapped with just wet news paper I'd just put it in the tub and do that with your saltwater.
