Welcome to R2R. Id let the cycle run a little longer before a water change. I've always let it be until amonia was zero. Then do a 20% water change. It's worked for me for almost 35 years.

What size are you looking to go? I started with a 40g years ago and I have a 69g now. My advice is to always go as big as you can afford/are comfortable with. I would post this question in the main forums to get more specific advice.
