Is it safe for my friend to cut a fiji leather coral and give me a peice same day? Or will that mess up the healing process?

Perfectly safe. Cut a chunk off and as long as your water is good it'll heal. Leathers are extremely hardy. I've cut one off at the base and it grew back with zero issues.
