Since my tank's maxed out on kalkwasser I'm needing additional alk+calcium; my mag levels are fine.

How do I calculate how much calcium Carbo Calcium is supplying?

From memory, the 700gram container mixes with 5 litres of RODI and results in 40,000mg calcium and 5,600 dKH.

so doing the math, that means each mL of solution (carbo calcium) results in 8mg of calcium added to the tank and approx 1.12 dKH. How do I translate those numbers to my tank? (approximately 30 gallons).

8mg calcium seems like a tiny fraction...

It is tiny.

So is dosing 1 mL. :)

30 gallons is 114 liters.

8 mg/114 L = 0.070 mg/L

Thus, if you want a 10 mg/L (ppm) rise in calcium, you add 10 mg/L / (0.07 mg/mL) = 143 mL.
