Orange shoulder tang maturity

So just a random question. We picked up a "sub-adult"(yellow still, but with his mouth gray already) orange shoulder, just curious if anyone has but one in the juvenile or sub-adult stages and been lucky enough to see them transform, or if anyone knows a typical time frame for these guys to mature. (The LFS we got him from has a pet orange shoulder the size of a football they've had for 3 years, that's still completely yellow)

I keep one in a 400g reef I maintain and it has stayed yellow for 3 years now. It is pushing 5" but starting to change.

Ours is 5-6" its hard to tell cause he won't sit still long enough for any good comparisons. I would like to think he's started to go gray, im curious how long the whole process takes.
