I was interested in adding a plant to my tank but unsure on how ... I was looking to maybe get turtle grass shoots. Are they hard to take care of? How do you clean sand bed if they are rooted in the sand?

I've tried collecting a few turtle grass shoots from a local estuary here in SW Florida. But I've not been able to keep them alive for more than a few weeks. But that doesn't mean somebody else might have great luck with them.
Roots growing into the sand bed can be an issue, especially in a reef tank.
Maybe consider a macro algae instead?
