Pump setting advice needed

I am currently setting up my second tank. First was a 15-gallon AIO. I am now setting up a 57-gallon display with a 20-gallon sump. The sump is the Fiji-20. IT HAS A 1200 gph overflow with 3 one-inch drains. I have a Jebao mdp-3500 return pump. I currently have my pump set at 75% and the drain tuned so that it is silent and the overflow is held just below the secondary drain. The issue I'm having is that the overflow from the chamber the drain empties into, the filter chamber, is really loud. I have tried using the filter floss box, the filter socks, and running it empty, but they are all at varying degrees of loud. I am working on cycling the tank, so I am running it with nothing in it right now, and it is distracting. Do I need to turn the flow down on the pump and re-tune, or should I just live with it until I am ready to install my filter roller?

so the noise is from the water flowing into the mechanical filteration section and dripping/trickling into the water below the filter section? Have you tried raising the water level with the baffle in the next compartment?

Also, your flow should be enough to have water flowing across the whole mechanical filter box from the drain surge area.

Yes, the noise is the water coming off the end of that filter box and down into the sump below, or directly into the sump below with the box removed. It's currently about a 3-4 inch drop. From there, it goes over a baffle and into the skimmer chamber. I have the baffle 3/4 of the way up the sump. I am worried that if I raise it any higher, the sump won't be able to handle the backflow in a power outage.

I would do some testing of your back siphon to check.
 
Slow the pump down before doing anything.
You only need 2-3× tank volume for flow through your sump.
So somewhere around 200 gph.
Turn up the pump.and it will get loader.
