The exact length of time could be anywhere between now and 2-3 years down the line. They don’t have a set time of transition, it can be brought on by other wrasses but even then it’s risky.
As for the diet -
Nori
Hard shelled foods (Muscles, Cockle etc.)
Mysis
Brine
Occasionally bloodworm

You really want to vary it around for this species as they do hunt for a varied amount of food naturally.
