So the question is, can I fill my 300 Gallon up with my RO water then mix my salt into it?

There is no live rock, sand, anything in it yet and it would genuinely just be easier to hook my RO up directly to the tank and let it fill up over a several day span. Is this ok?

Yes, no problems, your tank right now is just a large bucket. But to be clear, don't add salt mix to a running tank with livestock, that's not good idea lol!

And just watch the water as it's filling, it's easy to throw that RODI line in the tank and forget about it, and then you overflow your tank when you're not paying attention.

New question: if I am running a closed loop system in this tank.
My idea being:
A 2” inlet (from the tank in the middle back) split into a “T” that is downsized to 3/4 with two pumps at 950GPH each on each end, one supplying the closed loop on the top of the tank and one supplying the closed loop entrance on the bottom. Would this be enough GPH on this?and would the 2” pipe be able to feed enough water to these pumps? Thanks!

I have never done a close loop, but I'll bump this for you this morning, I know many here have done them.
