I’ve had my tank 3 months and we purchased a red serpent starfish
We’ve had the starfish probably 2 weeks now, and last night it looked like his “leg” Was cut
This morning it’s gone- he shed it
Now two more look like they will fall off too

Is he dying?

The nitrites and nitrates are in safe zones
The shop said our salinity was the same as theirs
All other fish, critters are doing well- shrimp, crabs, fish, coral etc

Is there hope for him? Can i do anything?

depending how much or little you feed your tank, it might be starving. I like to direct feed it at least once a month, just to make sure its getting its fair share of food. I do it either when I feed corals, or when I do water changes (basically turn off all flow to feed it).

I'm not saying thats what it is, it could be anything, I'm just throwing one possibility out there.

Pictures would help.

Could've gotten injured and a bacterial infection, especially with crabs.

How is his disk? I had a red one that came to me really thin and he started losing arms until he passed

If they start losing their arms/dissolving there's not really much you can do (it's some sort of infection that spreads). Once it reaches the center of the starfish it's pretty much all over.

A guy posted a thread this week where one of the limbs fell off, was still alive and grew new limbs (plus the original 4-legged starfish survived and regrew the limb). So he ended up with 2 starfish!

First time I've heard of that happening...

Good trouble: Have mushrooms ever become pests in your aquarium?
