So my refractometer says it’s calibrated for 68F. My water is always kept at around the same temperature I keep my tank at (78F) and isn’t ever that low. Is there a way I can calibrate the refractometer to read at 78F instead of 68F

Not sure what kind of refractometer you have - BUT - you just need to buy calibration fluid - keep it at the temptature of yoru tank water (i.e float it) - then use it to calibrate your refractometer - and its calibrated to 78
