I have a few questions on plumbing my rodi unit into my home plumbing. Any additional advice is welcomed as well.

1. Pretty confident into where I will tap into supply line. Right now I like tapping into my cold water supply to the hot water heater but check out pics to see if you see any issues or any issues in general with tapping in there.

2. Where to tap into for waste line. Few options.
Closest is tapping into supply to sump pump. This makes nervous however. I’m especially concerned about gas leaks.
I can also tap into main drain for the house. Slight elevation but should be fine.

Check out the pictures included and see what you think.

I run a dehumidifier into my sump pump, I feel like I'd be inclined to go that way, you might be able to just drill a small hole in that lid and just put the tubing through and seal it with silicone.

Keep the tap into your blue PEX at least 10 feet (more is better) away from the water heater.

Draining into the sump would be fine. If your pump is sealed (typically for radon issues), then as mentioned above, just seal the penetration. You could even use one of these fittings:
