Been using Seachem stability in order to cycle my tank. I dosed my tank to around 3 ppm of ammonia last week and it has finally dropped to 0 along with nitrites. However, the days I do not dose Seachem stability my NITRATES show up to be less than 5ppm. Is that usual? Should I continue to daily dose once I have fish?

Use reliable test kits like Salifert to test for ammonia and nitrite. If you have 0 ammonia and 0 nitrite then your tank is cycled. If you want to use an online calculator to calculate the exact concentration of nitrates you should have then you can also do that.
