whats the best shims to get. I am avoiding wood shims as I don't think there that good to use for the stand. whats better plastic or composite shims? and I will have to stack the shims on this possibly more than 3 shims as the concrete floor in the basement is not even as I presumed when I layed the leveler on the floor.

Plastic or Composite will be fine.

I really like the composite shims.

If you have that big of a gap consider using a piece of plywood to take up some of the space. It'll be way easier than messing with multiple shims.
