Where do you get the foam sheet from?

Amazon, Its closed cell foam. Any kind would work but the 1/2" seems to be the best to lock the corals into place.

How much air should get trapped in the bag above the water level?

I don't think it makes a lot of difference for coral, but for fish or inverts you want almost half the bag to be air.
