Sulphur vs carbon denitrator

I'm trying to decide between a Sulphur and a carbon denitrator reactor. I have had a DIY sulphur denitrator reactor in the past and my only complaint was the time to get it up and running and the ability to make small changes. An expensive needle valve fixed that problem. The biggest concern I have with the carbon denitrator is that it needs to be fed on a regular basis.

How did you decide which way to go?

Go with what you know unless you are looking for an adventure :)
