Just ordered a Waterbox Marine AIO 50.3 for my wife for her birthday. Want to make the set up user friendly as this is her first saltwater tank. Here’s at list of equipment and shopping for set up... let me know what you think and if you have any recommendations.

Welcome to R2R!!! List looks good. I would change the heater from a 300 watt heater to 2 150 watt heaters. they will be smaller and having 2 creates a back up in case one fails. The tank temp will not fall as quickly giving you time to buy another if needed.

Looking into Hannah test meters but the price is steep. What do you recommend and where to start.

I like different kits (only my preference):
For beginning
Ammonia - red sea
Nitrite - salifert

Nitrate- nyos
Ph - pinpoint

If you will have coral
Alk - hanna
Mag - salifert
Calc - red sea
Phosphate- hanna

Welcome.

Don‘t worry to much about lists. Even if you get everything you usually realize you need something else. That is the way it works for me anyway. Looks like have the basics covered

Welcome to Reef2Reef! I'm always (though I've only been on the board for a short time) impressed when people that ask for advice actually take time to consider the answers they get and follow up... You're off to a great start and I look forward to seeing how the tank progresses.
