I'm not sure about the mechanism behind vitamin C synthesis, but sometimes a novel gene can be transferred from one population to another by way of a virus. Interesting to think that such a gene could be lost for 1000 years, only to be reintroduced into a totally different population by way of a virus and some transposons.It is interesting that life evolves many of the same shapes or abilities in different families or even kingdoms.
Take flight, has evolved 4 or 5 times in fossil record.

At least 3 times different animals have evolved or lost the ability to synthesize vitamin c. Fish can, Mammals lost it, then some evolved it again. And even before fish some microbes can but some lost it.
