What is this thing? My best guess was a Stomatella snail..

Stomatella have a little half shell on their back. This guys doesn't seem to, but it may just be the pictures. Maybe some kind of slug?

The first pic looks like it has a shell.
The second looks like it's standing. I've seen stimas do that.

Does this thing move on it's own or is it attached to the rock? If it's the former than it's probably a Stomatella snail. If it's the latter maybe a Sea Squrt? It does look like there's a vent in that second picture above.

Looks all the world like a Stomatella to me. It's probably annoyed by the pinchy shrimp, so it's taking on some odd poses, but at the top of the snail in the first photo, you can see the little flat swirl of its shell - all that's left of the Stomatella's spiral.

^ Yup.

When I do not keep shrimp or hermit crabs I see a lot more Stomatella in my tanks, go figure.
