Let me start this by saying I enjoy cooking. I have no training and most of what I have learned is through trial and error (mainly error), and Good Eats. I always enjoy learning new dishes and sharing the ones I make. I don't do fancy stuff, just what tastes good. I don't measure anything I add then taste. I recently found an amazing butcher and have really been playing around!
I'll get this started with a very simple one.
Tosquiters (toe-squeet-ers) I may be the first person to spell it.
This is one that my grandma would always make. I tell people about it and they always say "Oh, a burrito." well I haven't been to anywhere and had this. So… it’s close but not really. There is no chili powder in this
The way my grandma would do this is:
Take hamburger meat ~2lbs and brown it. Season with salt/pepper/garlic/ whatever you like
Then add two cans of Rotel. Drain
Fry up some tortillas and serve
We would always have fresh sliced onions and tomatoes, shredded cheese, and (if we were lucky) guacamole each in its own bowl for the creator of their tosquiter to use as wanted.
Really simple right, but it is amazing! This is without question my favorite dish of all time. So I have tweaked it and made it, sorry Grannie, better.....
Same steps as above
One pound of lean ground beef
One pound of pork sausage (that is what it is called at my butcher, it’s not Italian or any breakfast type, although I have tried them and they work)
Two cans of Rotel one Hot and one mild
Put tortillas in foil and heat up in oven on 350 (I do three per person with two extra.)
Then the fixings done the same as above.
The Guacamole:
Two avocadoes
Cilantro
Onion
One lime or lemon
One large tomato or a few small ones (which ever look better)
Kosher salt
Freshly ground black pepper
Freshly minced garlic 1-2 cloves
I cut the avocados first and add to a bowl slightly smash with a fork.
Dice onion and tomato and stir in
Chop cilantro and stir in
Half the lime or lemon and add juice from one half
Salt/pepper/garlic to taste.
Stirring with each step will break the avocado into a slightly chunky texture just how I like it!
The key to this is to make one and eat it before you sit down because about the time your but hits the chair you are ready for another. If you get really into it you can take the pans and everything to the table! <--- This is what I do
