Let me start this by saying I enjoy cooking. I have no training and most of what I have learned is through trial and error (mainly error), and Good Eats. I always enjoy learning new dishes and sharing the ones I make. I don't do fancy stuff, just what tastes good. I don't measure anything I add then taste. I recently found an amazing butcher and have really been playing around!

I'll get this started with a very simple one.

Tosquiters (toe-squeet-ers) I may be the first person to spell it.

This is one that my grandma would always make. I tell people about it and they always say "Oh, a burrito." well I haven't been to anywhere and had this. So… it’s close but not really. There is no chili powder in this

The way my grandma would do this is:

Take hamburger meat ~2lbs and brown it. Season with salt/pepper/garlic/ whatever you like
Then add two cans of Rotel. Drain
Fry up some tortillas and serve
We would always have fresh sliced onions and tomatoes, shredded cheese, and (if we were lucky) guacamole each in its own bowl for the creator of their tosquiter to use as wanted.

Really simple right, but it is amazing! This is without question my favorite dish of all time. So I have tweaked it and made it, sorry Grannie, better.....


Same steps as above
One pound of lean ground beef
One pound of pork sausage (that is what it is called at my butcher, it’s not Italian or any breakfast type, although I have tried them and they work)
Two cans of Rotel one Hot and one mild
Put tortillas in foil and heat up in oven on 350 (I do three per person with two extra.)
Then the fixings done the same as above.

The Guacamole:
Two avocadoes
Cilantro
Onion
One lime or lemon
One large tomato or a few small ones (which ever look better)
Kosher salt
Freshly ground black pepper
Freshly minced garlic 1-2 cloves

I cut the avocados first and add to a bowl slightly smash with a fork.
Dice onion and tomato and stir in
Chop cilantro and stir in
Half the lime or lemon and add juice from one half
Salt/pepper/garlic to taste.

Stirring with each step will break the avocado into a slightly chunky texture just how I like it!

The key to this is to make one and eat it before you sit down because about the time your but hits the chair you are ready for another. If you get really into it you can take the pans and everything to the table! <--- This is what I do

I am sure in my tired state I have left something out, but the reason for this thread is to share. So post up your favorite things to make! Desserts are welcome :)

Heres one of my favs its for a jerk marinade for chicken. I usually cook it on the grill and let the marinade sit for atleast 8 hours but usually overnight.
4 large garlic cloves, chopped
1 small onion, chopped
4 to 5 fresh habanero chile, stemmed and seeded
1/4 cup fresh lime juice
2 tablespoons soy sauce
3 tablespoons olive oil
1 1/2 tablespoons salt
1 tablespoon packed brown sugar
1 tablespoon fresh thyme leaves
2 teaspoons ground allspice
2 teaspoons black pepper
3/4 teaspoon freshly grated nutmeg
1/2 teaspoon cinnamon

made this yesterday in my slow cooker for dinner , it turned out great!

[h=3]CHILI with ground beef
Ingredients:[/h]
  • 2 lbs. ground chuck
  • 1 cup chopped onion
  • 1 green pepper, chopped
  • 2 to 3 ribs celery, chopped
  • 1 large (28 oz.) can crushed tomatoes
  • 1 (8 oz.) can tomato sauce
  • 2 cans kidney or pinto beans, drained
  • 1 tsp. pepper
  • 3 tsp. chili powder
  • hot pepper, to taste, cayenne
  • 1 tsp. garlic salt
[h=3]Preparation:[/h]
In a large skillet, brown the ground beef. Drain well. Combine all ingredients in a slow cooker; cover and cook for 7 to 8 hours on LOW, or until done.
Serves 6 to 8.

This is a great quick and easy summer side dish ....especially if you can get the veggies straight from the garden! Making it tonight to go along with chicken on the grill!!

Black Bean Salad

2 cans black beans - rinsed and drained
4 thinly sliced green onions
2 chopped plum tomatoes
1 chopped onion
1 chopped large red sweet pepper

Dressing:

2 tbls olive oil
2 tbls red wine vinegar
1 tbls lemon juice
1/2 tsp salt
1/4 tsp pepper
3/4 tsp minced fresh basil (or 1/4 tsp dried)

In a bowl, combine the beans and veggies. In a jar, mix the dressing ingredients, shake well and then drizzle over vegetables and toss to coat.

Best if covered and refridgerated for at least an hour before serving.

Just fine if you want to make it a day ahead too .... vinegar and lemon keeps everything fresh!

How about some lemonade?

One gallon of RO water :)
12 lemons
1-2 cups of sugar

Heat one quart of water on stove with sugar. If you like sugary lemonade use two cups.

Zest one lemon and juice all 12. this should yield two cups of lemon juice.

Add lemon juice to the three quarts of water.

Once sugar is dissolved completely into the water on the stove. Let it cool, and then add to the lemon water.

Put in fridge or pour over ice.

Ohhh, looking good and looking foward to seeing what others have to share. Will have to see what I can come up with, usually don't do much cooking from scratch because of time limits so usually it is quick and easy.

Here's my favorite BBQ Sauce recipe (courtesy of AllRecipes.com)


  • 2 cups ketchup
  • 2 cups tomato sauce
  • 1 1/4 cups brown sugar
  • 1 1/4 cups red wine vinegar
  • 1/2 cup unsulfured molasses
  • 4 teaspoons hickory-flavored liquid smoke
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon coarsely ground black pepper
