What do you think are the keys to your success in reefing?

OK Mike, @Nor'easter Reefer. I got you brother. Here are two different recipes. The first one is the recipe for the legendary Mrs. Leah Chase. It is made with out a roux. A Native American leaf powder called file' (fee lay) along with okra are what thickens the gumbo. This is the most famous gumbo house in New Orleans recipes.

This one is more "traditional" and does have a roux.

You can make your own roux if you want by slowly cooking your flour and oil to your desired color and flavor. Also, if you want to pass on making your own, buy a good mix like Kerry's that isn't flavored. They even have it jarred already cooked down if you want to avoid the powdered mix. Ieaten peoples gum o that used it and youd never know the difference. To me, making the roux is the most fun part of the process and is what really makes the gumbo unique to you. On another side note, precooked rotisserie chickens help speed this process up a lot. And it's gumbo, you can do anything you want!

Absolutely! Do you wanna do seafood or chicken and sausage? Lol my favorite is chicken and sausage with shrimp. Let me find a good one for you brother.

You know ow man, I dont really care for jambalaya either. I dont know why. It's all the ingredients I love. Pastalya is pretty good.

Potato salad and garlic bread are excellent sides to go with it.
I like a tangy vinegar based hotsauce, or a green pepper vinegar sauce to top it with.
If you make too much, which is easy to.do, it freezes really well!
 
Is that a local brewery? I like some of the obscure styles of beers you post and they always have a good selection
yes, Freeport. I used to do my own stuff but had to stop. you should have seen my big brew days 😏 still have all the stuff but plan to give it to the kids.
 
Reefled 90s. Marineland 65 gallon heartland
so I don't have a ceiling above my tank. I went with these HMS mounts. you just need to make sure you keep tension on them since they could wobble otherwise. or you could make a wider foot for it. really meant for Eurobraced tanks but could work for yours.
