I’d like to buy something compatible with Apex that will automatically close my skimmer when the cup fills to a certain level.

What type of product am I looking for? As long as it’s compatible with my controller, it’s good for me.

Depends on your setup. Hydros has a nice skimmer cup specific sensor. Apex has the MOS (magnetic optical sensor) that would work if you have an FMM. If not and you have a break out box a standard float switch drilled through the lid is your solution. Float Switches.
 
My skimmer has a spot to add a float switch (reef octo) which apex can control with the FFM module.
