So my tank as been fallow and my fish have been in copper for the appropriate time, I am going to start doing water changes to get rid of the copper and then move them back into the DT. Question is if all the fish were in the DT before can I add them all back in at the same time or is that asking for an ammonia spike. 5 fish and 55 gallon tank

Yes. You don't lose the bacteria.

Or how many water changes and how often

Removing copper is not needed before moving the fish back to the DT. You just should match up the temperature and salinity and then you can move them right over.
