was curious as to how much water does your sump accept when your return pump turns off? I have about 6 inches or room to spare.

I have a 180 with a 75 gallon sump and it comes darn close to overflow. However, this means nothing, every set up is completely different. You are gonna want your returns to back siphon as little as possible, what are you using for returns and drain lines?

The tank comes with an overflow, I don't have the tank yet. It'll be here on Tuesday

If your siphon break is setup properly, it will not matter what size your sump is compared to your DT.
If I wanted to keep the returns deeper in the tank can I drill holes on the bottom side of the loc lines to break the siphon

I have 180 gallon with 40 gallon sump. I have check valves on both return line, so when returns are off, it only raise sump level by an inch or two. At time I need to take apart the plumbing above the check valve, I have to lift the return nozzle off water. I could make a siphon breaker to the return lines to be saver, but don't feel the need so far.

I had that setup and only had about half inch of backflow because I drilled siphon breaks and cleaned them monthly.

I now have a 24 with a half 90 sump and tested it and get a 1 inch rise. Again drilled siphon breaks
