Gave brisket a try today for the first time. Turned out ok. Need practice. About a 10hr smoke.

Using butcher paper, your in the right direction.

The meat doesn't look tender from this picture. Was it tough? Only asking because how it looks broken off like jerky.

When did you wrap, and when did you pull off?
