I've had this birdsnest coral for a week now and it's been on the sand bed with my kessil on acclimation mode. Is it normal for it to not open up after this long or should I move it?

That’s a nice looking frag... Can we see a pic of it closed?
 
It looks okay to me! Move slowly with birdsnest, it’s quick to die on you. I would use a magnetic frag rack to move it up slowly so you don’t shock it with too much light. Great polyp extension!
 
Lol I thought it was closed. Here is a pic from lfs when I bought it.

I don’t think that is a pic of the same frag....... the one I can barely see off to the left seems more likely.
 
That looks like a pic of a green Birdsnest, the one you have is clearly purple. I think you got the one just out of frame on the left as well
 
If they eventually grow and touch each other what will happen?
They will probably start to burn each other through coral warfare. One will win and the other will be left with a dead spot where they touched
