There is no way that you can get nitrates from chemicals "leaching". Nitrates are a form of nitrogen that is essentially breaking down. While I can not explain it, you will get Nitrates in ANY water that sits in ANY container longer enough. But the amount of Nitrate will be so small as too not matter. That has ABSOLUTELY NOTHING TO DO WITH THE CONTAINER.

I bought 2 white food grade 55g barrels From a drum recycling place near me. They were used for cooking wine previously. Cleaned them and Put a bulkhead at the bottom of each and good to go. Best part Is they are $12. I’ve used them for 3 years and no issues

It's not nitrates, it's not know what is causing the TDS to go from zero to 20+. As long as it won't harm my tank I don't care what it is or the cause
