What courses, certificates, ect have helped you in this hobby? I've got free time and my post 9-11 GI bill to use up. Bonus points if they are online!!!

Heat Transfer classes have helped me in the past with calculating heat loss from various tanks, and from evaporative cooling.
I've done some stress analysis on stands for a large tank (1000 gallons...)
I wish I had paid better attention in chemistry...

I’m a member of my college’s marine biology club so that has helped out a lot :)

Without knowing anything about you I would sugest general chemistry and biology. That would go a long way with the stuff you need to know for reefing. It's good stuff to know with dogs too.

Biology, microbiology, fisheries, aquaculture, chemistry, animal behavior, carpentry/fabrication/electronics if you like to build things.
What classes have you taken? The best general takeaway that applies to everything is to learn how you learn best.
Otherwise you will need to be more specific on what you want for better recommendations. Most courses will have pre-reqs too

You could potentially look into some lab classes on subjects that are interesting to you. They wouldn't be online though. You learn the application of scientific methods and skills around proper measurements and observation. And how to use tools and scales and such

I've had all the basics as I've been to nursing school. Biology, chem, anatomy, algebra you get the idea. I'm interested in being better at DIY stuff like stands and building tanks. Skills to help build my fish room. The knowledge of marine specific environments, as well as pharm/chem specific to fish
Project management, financial planning, and marriage counseling.

Most helpful skill for design planning imo without many years of job training to do it in your head would be a basics of design lab in the engineering department. Could probably also check with school of architecture but my preference would be college of engineering if you can get along with very direct and factual people
3d cad is straight forward to learn. It might be daunting or complex at first but the lab should have good lessons that walk you through it. dimensionally accurate modeling will reveal problems in a plan before you spend your money and go too far to turn around.
You can get student discounts on software as well. You may find your school is sponsored and get it for free.
Skip 2d or hand drawing classes unless you plan to get the degree as they are less helpful here imo.
