Dead Clam

I added a new clam and something in my tank ate it overnight. I’m assuming it was either my skunk shrimp or nassarius snails. Why would they do that?

If it was unhealthy, or was ambushed by a predator the cuc in many tanks will devour the carcass overnight without hesitation.

I think we'll need more info in order to help. Without knowing the general health of the clam or what's in your tank, there could be many culprits involved.
