I am relatively new to the hobby looking to setup a new reef tank. My first tank, roughly 15 years ago was a dismal failure, but I am looking to start again now that I have more time to dedicate to the hobby.

Here is a list of the equipment I have assembled to date:

Red Sea Reefer G2 250+
Reef Octopus Classic 152-S Protein Skimmer
1 Ecotech XR 15 Pro G4 (with Mobius chip)
1 Jecod DCP 6500 Sine tech Silent Pump
Inkbird Heater Controller
Eheim Jagger 250W Heater
Tunze Turbelle nanostream 6055 electronic
Tunze Turbelle nanostream 6015
AI Nero 3
4 stage RO/DI Unit
Aquaforest Reef Salt
Carib Sea Direct Live Sand
Okay, I've made some changes to my equipment. I elected not to go with Red Sea because frankly I was terrified of getting one that leaks. I purchased an Aquael tank that I subsequently drilled and then modified the cabinet so that it could accommodate a sump. Rock scaping is not my thing (I tried several times to do the negative space thing but failed), so it's pretty simple, but I am immensely proud of my accomplishment considering I've never attempted anything like this before.

Right now the tank has been cycling since October 11th and it is taking forever.... lol.
My current parameters are:

Tank Size: 64G, Sump = 17G

Salinity 1.025
Ammonia 1.5 mg/L
Nitrite 2 ppm
Nitrate 7.5 ppm
pH 8.15

I've added Dr. Tim's One & Only, Microbacter7 (daily), and Dr. Tim's Ammonia Chloride. I thought the cycling process would be finished by now but I guess I need to be patient.

Using these product, a cycle typically takes about three weeks, give or take. Just give it time to do its thing.

Will do. Is important to measure any other parameters at this time, i.e. Phosphate, Magnesium, alkalinity, calcium? Can I wait until after I add fish and the tank matures to measure them?

You don't need to measure Alk, Calc, and Mag at all when you're cycling, and if you're only keeping fish. Those parameters are important when you start getting into corals, and specifically LPS and SPS stoney corals. These parameters are less important for soft coral care. Once you're cycled and you have some livestock you might want to test for phosphate as both zero phosphate and high phosphate can encourage ugly algae.
