What’s wrong with distilled water?

I use Kroger’s often it tests 0 tds, tried some from Walmart it tested 8 tds. Of course ro/di is ideal and easier
I’ve read there’s a risk of copper. To be fair, I did not research that fact — I already had an RODI unit I just needed to screw onto the sink :)

Only if the water has been steam distilled should you worry. Copper pots and condensers are commonly used in the process which would result in a significant amount of copper in the water, which is totally fine for human consumption, but not our tanks.
