But just how, does it work ?

Siphon is the normal drain that goes from overflow to sump
Open channel has about 5% of the drain water draining through it
Emergency is just open and there in case the other two drains fail/clog

This is a standard beananimal setup

Returns are the water going back to the tank from the sump. There are two of them in this case.

Yes

This is what maintains your water level properly in the overflow. Naturally due to various reasons the level of water in the overflow will move up and down an inch or so over time. This is a bit annoying and can cause some noise. By allowing a bit of water to trickle through the second pipe you now have a buffer zone - Instead of the level in the overflow rising and falling, the amount of water that drains through the pipe will change slightly instead.
