How often do you guys change your filter socks? Can not changing them frequently contribute to high phosphate levels?

It can. Usually people do it weekly of cleaning and bleaching

I personally use a filter roller

If I have low nitrate and phosphate, Id let them stay until they clog, which was typically in 2-3 days for my tank. If they were high, I'd change it daily.

I personally don't like socks, and many members here at R2R don't run mechanical at all. For a sump, I'd go with media cups and some Poly-Fil, which is just like filter floss, but found much cheaper at craft stores or your local Mega-Lo-Mart, used for stuffing pillows, etc. I'd pull the Poly-Fil and ditch it between 3-7 days. It couldn't be easier or cheaper :)

Socks stink lol!

When I used socks, I would change them out weekly. Twice a week might be needed, it depends on the tank.

I don’t use socks anymore. I just use some filter floss in the tray above where socks would go that I swap out once per week. If I needed mechanical filtration, I would think about installing a roller mat, but my nitrates are chronically low so don’t have the need.

I have six pairs of felt socks and 1 pair of mesh socks. I change a pair every 3 or 4 days. When I get to the mesh pair I throw the felt socks in the washing machine. Run a quick wash with bleach and vinegar, then rewash with just water. Hang and dry. Then repeat. I always rinse a pair in RO water before using.
