So, I've seen this style of low profile overflow that is a lot cheaper than the type that has a whole box attached to the back of the tank. The problem Is, I'm not finding a whole lot on how to plumb this type of overflow. Just seems like if I just drill a hole, attach a bulkhead and silicone this overflow in place, that I would get a lot of gurgling noise. Is there any special way to plumb this type of overflow?

None of those are possible with this type of overflow.

It apears you are looking at only the internal overflow box. These can be used with syphon tubes bit that is not good.
The second video is the way.

SO am I not wrong? If I just install the low profile design with a bulk head and directly plumb to the refugium, I'll get gurgling noises? Is this particular low profile design that useless?

There’s a reason for the dramatic price difference between that outdated “low profile” Glass-Holes style overflow box that you listed and the more modern Herbie/Bean-animal style overflow set ups out on the market.

I guess it's cheap enough, i'll buy one and do some experiments with it since I can't seem to find any answers that I'm looking for. I don't know if I'm just asking the wrong questions or what, but I can't find anything about this in particular.

Like I said, it’s pretty much a Glass-Holes style overflow kit, except you’ll have to silicone the overflow to the glass and because it’s low profile, the flange side of the bulkhead will have to be on the inside of the tank. Here are a few videos so you can grasp the concept of how to plumb it.
