I have this skimmer running on a 150 cube after a reefmat 1200. My tank is light-medium stocked with 5 tangs, 2 clowns, 1 chromi, 2 anthias, 2 damsels, 1 sixline, 1 Foxface, cleaner shrimp.

Tank/skimmer has been set up for 1 month and I'm still battling microbubbles in the main display. It's beyond frustrating to the point where I've almost given up trying to fix it.

I'm 99% sure the culprit is the skimmer, which is still shooting out loads of microbubbles at the bottom of the skimmer. Despite a return baffle and a large sponge filling the whole return baffle, these bubbles are making their way to the display.

Skimmer is under 10 inches of water. I've tried everything from 8-10 inches of depth. I've tried tuning the nozzle on the skimmer from 1-5 but nothing really seems to make a difference. In general, I'm not getting a lot of skimmate. It's very little but very dark and slowly fills the cup. Guessing it's a combo of lower nutrients and strong mechanical filtration/not a lot of fish?

Here is a video of my skimmer bubbles. I bought this skimmer second-hand in almost brand-new condition. A month's worth of microbubbles is driving me to the point of replacing this skimmer for something else or removing it.

It appears to be assembled properly from what I've checked.

Yes. The Reefmat is causing the skimmer to under perform. Not enough "dirt" for the skimmer to hold or create a foam head or even create skimmate. Not much you can do as the bubbles don't have any "dirt" to attach to. You can always turn the skimmer off and check if you are still getting air bubbles in the display.
