The only exposure (if any) many folks have to gator meat is old, dried out jerky. Fresh, well seasoned and grilled, is not tough. A bit chewy compared to chicken, maybe... but more tender than most red meat. Stewed, with sauce piquante, it's absolutely fabulous.

It’s absolutely delicious if cooked properly. Most people have never had it done right.
