What is that rubble called? I have tried to find it on Google but don't know what to call it.

You can literally use anything, large particle crushed coral substrate, large particle sand, broken coral skeletons, broken live rock, calcium reactor media. Anything goes - Mushrooms like to attach to anything, I tried many different things and they all work well.
