We recently added a Pink Rose Bubbletip Anemone into our tank on Sunday. This anemone stays at a good size throughout the day but usually around 5/6PM it shrinks. I know corals/anemones do shrink when it gets darker in the tank but this size is crazy to me. Is this normal? The piece still has not bubbled, only looks like a long arm tentacles as well. Any tips/help would be greatly appreciated.

Yes that is normal. It's very surprising how much they can deflate at night. As far as the bubbles. Sometimes they do and sometimes they don't. Very strange behavior. Good lighting and flow should make it happy and stay put.
