Fantastic write up., I was about to visit a fish market in Jacarta on New Years day this year. Many vendors were closed but it was very good to see. I started in the 70s and the old practices still work. I didn't ask when I was at the market but I just assumed they were using sea water. I will be back to Indonesia soon, and may move there. Thanks for posting.
