Hey Randy, just so I can sleep at night, is there a cheaper Sodium Nitrate product, preferably available at Amazon, that you could suggest? Thank you

Depends on what cheaper means (less total cost or less per gram), but when I looked it was the cheapest total cost for food grade sodium nitrate. Ammonium bicarbonate may be less since it is a widely used baking product.
